Kayla's Client Kitchen: Creamy Chicken & Rice Casserole

Some recipes become favorites because they're fancy.

Others become favorites because they simply work.

This creamy chicken and rice casserole has found its way onto the tables of several of my clients over the years. It's warm, comforting, filling, and easy to customize depending on who I'm cooking for. Whether someone needs a softer meal, leftovers for the next day, or just something that feels like home, this recipe has never let me down.

One of the things I love most about caregiving is that it isn't just about helping with medications, appointments, or daily tasks. Sometimes caring for someone looks like standing in their kitchen, filling their home with the smell of dinner, and knowing they'll have a homemade meal to enjoy for the next couple of days.

This is one of those meals.

Ingredients

  • 1 lb chicken breasts or chicken thighs

  • 1 can cream of mushroom soup (or cream of celery)

  • 1 can cream of chicken soup

  • 1 cup uncooked white rice

  • 10 oz frozen broccoli, chopped

  • 2¾ cups water

  • ½ cup milk

  • Chicken bouillon powder (to taste)

Seasonings

  • Salt-Free Mrs. Dash

  • McCormick Garlic & Herb

  • Montreal Steak Seasoning

  • Paprika

Directions

  1. Preheat your oven to 350°F.

  2. Season both sides of the chicken with your preferred seasonings.

  3. In a 9×13 baking dish, combine the cream of mushroom soup, cream of chicken soup, water, milk, chicken bouillon, rice, and chopped broccoli. Stir until everything is well mixed.

  4. Place the seasoned chicken on top of the rice mixture.

  5. Cover tightly with aluminum foil.

  6. Bake for approximately 1½ hours, or until the rice is tender and the chicken reaches an internal temperature of 165°F.

  7. Let the casserole rest for 5–10 minutes before serving.

Kayla's Tips

One of my favorite things about this casserole is how customizable it is. Don't be afraid to make it your own!

  • Add whatever seasonings you enjoy. If there's one you don't like—or don't have in the pantry—that's perfectly okay. Recipes don't have to be followed exactly to turn out delicious.

  • One of my clients isn't a fan of mushrooms, so she swaps the cream of mushroom soup for cream of celery. It comes out just as creamy and comforting.

  • My husband and I love a little spice, so we usually add Cajun seasoning and sliced jalapeños to ours for an extra kick.

  • If I'm cooking for someone who has difficulty chewing, I'll finely chop or mince the broccoli so it blends right into the casserole.

  • Chicken thighs make the casserole a little richer and stay incredibly tender, while chicken breasts are a great lean option.

  • This recipe reheats beautifully, making it perfect for leftovers or meal prepping for a busy week.

There's something special about a meal that doesn't have to be complicated to make someone smile. Over the years, I've learned that some of the most appreciated meals are the simplest ones—the ones that remind people of home, bring comfort after a long day, or make life just a little easier.
