Kayla's Client Kitchen: Kayla's Homestyle Meatloaf

If you ask me what comfort food looks like, meatloaf is near the top of the list.

It's one of those meals that reminds people of family dinners, handwritten recipe cards, and kitchens filled with the smell of something baking in the oven. I've made this recipe for clients and for my own family, and every time it disappears just a little faster than I expected.

One of my favorite parts about cooking for others is seeing how food brings back memories. Sometimes it's a recipe someone hasn't had in years. Other times it's simply the feeling of sitting down to a homemade meal without having to worry about making it themselves.

This meatloaf is simple, hearty, and pairs well with just about anything—mashed potatoes, roasted vegetables, macaroni and cheese, or even a simple side salad.

Ingredients

Meatloaf

  • 1 lb ground beef

  • 1 snack-size sleeve of saltine crackers, crushed

  • 1 egg

  • 3 generous splashes of milk

Seasonings

  • Salt-Free Mrs. Dash

  • McCormick Garlic & Herb

  • Montreal Steak Seasoning

  • Paprika

  • Lemon Pepper

Homemade Glaze

  • Ketchup

  • 1 squirt yellow mustard

  • Sugar

  • Water

  • A splash of barbecue sauce or Worcestershire sauce

Directions

  1. Preheat your oven to 350°F.

  2. Crush the saltine crackers into fine crumbs.

  3. In a large bowl, combine the ground beef, crushed crackers, egg, milk, and your seasonings. Mix until everything is just combined. Avoid overmixing, as it can make the meatloaf tough.

  4. Shape into a loaf and place in a loaf pan or on a lined baking sheet.

Make the Glaze

While the oven is preheating, combine the ketchup, mustard, sugar, water, and a splash of barbecue sauce or Worcestershire sauce in a small saucepan.

Heat over medium-low, stirring frequently, until the sugar has dissolved and the glaze becomes smooth and syrupy. Taste and adjust as needed—you can always add a little more ketchup for tang, sugar for sweetness, or Worcestershire for a richer flavor.

Bake

  1. Cover the meatloaf with foil and bake for about 15 minutes.

  2. Remove the foil and spread about half of the warm glaze over the top of the meatloaf.

  3. Return it to the oven and continue baking until the meatloaf reaches an internal temperature of 160°F.

  4. Let it rest for about 10 minutes before slicing.

  5. Spoon a little of the remaining warm glaze over each slice before serving.

Kayla's Tips

One of the best things about meatloaf is that everyone seems to make it a little differently.

  • Don't stress about the exact seasonings. Add more of your favorites, leave out the ones you don't enjoy, or try something completely different.

  • If you like a little heat, add Cajun seasoning or diced jalapeños to the meat mixture.

  • If your meatloaf feels a little dry, add another splash of milk. If it's too wet, add a few more crushed crackers.

  • The homemade glaze is one of my favorite parts of this recipe. Saving some for the end gives every slice a little extra flavor.

  • Meatloaf is even better the next day. My husband and I both love using the leftovers for meatloaf sandwiches.

Some of the best meals aren't the ones that take hours of preparation or use fancy ingredients. They're the ones that make a house feel like home.
